Fruit And Lettuce Bowl

Ingredients

Dressing:
2/3 cup safflower oil
1 teaspoon lemon peel grated
1/2 cup lemon juice fresh
2 tablespoons honey
1 teaspoon paprika
1 clove garlic minced
1/2 teaspoon dry mustard
Freshly ground pepper to taste

2 apples McIntosh, cored and thinly sliced
Fresh lemon juice
2 heads lettuce romaine
1 chicory smal l or curly endive
1 cup celery chopped
3 green onions thinly sliced, including some tops
1 cup mandarin orange segment drained

Directions:

* Combine all dressing ingredients in a jar with a tight fitting lid shake vigorously and refrigerate until ready to use. Salad:
*Sprinkle apple slices with lemon juice to keep from darkening. Wash and tear greens into bite-size pieces and dry. Add celery and green onion chill. Just before serving, add apples and mandarin oranges to greens add dressing and toss.
