Frozen Cream Lime Pie

Ingredients

3 eggs yolk lightly beaten
1/2 cup sugar
2 to 3 teaspoons lime rinds grated
1/4 cup lime juice fresh
dash salt
3 eggs white
5 drops food colors green
1 cup whipped cream
1 graham cracker pie crust ready-made
Whipped topping
Fresh lime slices
Chopped pistachio nuts (optional)

Directions:

In a medium saucepan, mix egg yolks, 1/4 cup of the sugar, lime rind and juice, and salt until blended. Stirring constantly over medium-low heat, cook until thickened and mixture coats a spoon. Chill.

In a small mixer bowl at high speed, beat egg whites until soft peaks form. Gradually beat in remaining 1/4 cup sugar and continue beating until stiff and glossy. Stir one-fourth of the egg whites and food color into egg yolk mixture to lighten. Fold in remaining whites. In small mixer bowl at medium speed, beat cream until stiff peaks form. Fold into egg white mixture until blended. Pour into crumb crust. Freeze at least 4 hours or until firm. When frozen, cover with foil. Remove from freezer, uncover and let stand for 20 minutes before serving. Garnish with whipped topping, lime slices and nuts just before serving.

FROZEN CREAM LIME DESSERT: Pour mixture into a 1-quart serving bowl instead of crumb crust. Freeze and garnish as above.
