Friendly Ghost Cookies

Ingredients

2 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1 cup margarine softened
3/4 cup sugar
1/2 cup powdered sugar
1 egg large
1 1/2 teaspoons vanilla extract

Directions:

Mix flour, baking soda, cream of tartar and salt.

Beat margarine, sugar, and powdered sugar in a large bowl with electric mixer until blended. Beat in egg and vanilla. On low speed, gradually beat in flour mixture until well blended. Divide dough into three portions. If too sticky to roll, cover and chill up to 2 hours.

Preheat oven to 350°. Roll one portion of dough at a time to 1/8 -inch thickness on a lightly floured surface (keep remaining dough in the refrigerator). Cut with floured cutters. Place 2 inches apart on ungreased baking sheets.

Bake 10 to 12 minutes until light brown and no longer puffy. Cool 1 minute on baking sheets before transferring to cooling racks. When cool, decorate with colored icing if desired. After icing sets, store loosely covered.
