Dessert Fruit Loaf

Ingredients

2 cups flour
2/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon ground
1/2 teaspoon allspice ground
1/4 teaspoon mace ground
1 cup walnuts chopped, toasted
1 1/2 cups crushed pineapple lightly drained
2 eggs lightly beaten
2 tablespoons vegetable oil
1 tablespoon orange rind grated
1 teaspoon lemon peel grated
* Part two.
1/2 cup powdered sugar
2 tablespoons orange juice concentrate
1 teaspoon lemon juice fresh

Directions:

Heat oven to 350° F. Grease and line bottom of 5 1/2 x 9 1/2 x 2 3/4 -inch loaf pan with greased wax paper. Sift dry ingredients and stir in nuts. Mix together remaining ingredients and blend with dry ingredients. Pour into prepared pan and bake for 50 minutes or until toothpick inserted in center of cake comes out clean. Remove to rack to cool. Prepare the following Orange Frosting.

Note: For altitudes over 5,000 feet decrease baking powder to 2 teaspoons.

Orange Frosting:
*Blend all ingredients in a small bowl. Spread over loaf while it is still hot.
