Cucumber Salad

Serves: 6

3/4 cup sugar
3/4 cup white vinegar
3/4 cup water cold
3/4 teaspoon salt
dash black pepper
5 cucumbers large, peeled and thinly sliced (8 cups)
2 onions small, thinly sliced and rings separated
Scallion Firecrackers (see below)


At least 3 1/2 hours or up to 1 day before serving:

In a small bowl, combine sugar, vinegar, water, salt and pepper set aside.

In a shallow 3-quart dish, place cucumbers and onion rings. Add vinegar mixture and toss gently. Cover and chill at least 3 hours or overnight, stirring occasionally.

Just before serving:

Drain marinade and place cucumbers and onions in a serving bowl. Garnish with Scallion Firecrackers.
