Cream Of Broccoli Soup

1/4 cup onion coarsely chopped
1 tablespoon margarine
3 cups chicken bouillon
2 cups iceburg lettuce chopped
1 (10-ounce) package frozen chopped broccoli
1/8 teaspoon black pepper
parsley Chopped


In a 3-quart saucepan over medium heat, sauté onion in margarine for 2 minutes or until beginning to soften.

Add bouillon, lettuce, broccoli and pepper. Bring to a boil reduce heat to low, cover and simmer for 10 minutes or until broccoli is tender. Place half at a time in a blender container. Cover and blend at high speed for 1 minute or until very smooth.

Reheat soup before serving. Garnish each serving with 1 teaspoon chopped parsley.
