Coffee Liqueur

Ingredients

* See note below.
1 1/2 cups sugar
1 1/2 cups corn syrup dark
1/2 cup water
1/4 cup instant coffee
2 cups brandy
2 cups rum
3 teaspoons vanilla extract

Directions:

* Serve as you would serve Kahlua or use in the drink recipe below. The liqueur recipe can be easily doubled to make enough for a gift for someone else and yourself, too. Store in glass containers, not metal or plastic. In a 2-quart saucepan over medium heat, stir sugar, corn syrup and water until mixture boils and sugar is dissolved. Remove from heat. Stir in coffee granules until dissolved. Cool to room temperature.

Stir in brandy, rum and vanilla extract. Pour into a sterilized jar or bottle cap tightly.

Store in a cool, dark place and let stand at least 1 week to allow flavors to blend. Liqueur will keep indefinitely.

Note: Use coffee liqueur in the following recipe: Acapulco Cream For Two: Stir or shake 1/2 cup tequila, 1/2 cup coffee liqueur and 3/4 cup cream with about 1/2 cup crushed ice until mixture is very cold. Strain into chilled glasses.

Line a basket or box with a cloth napkin or tissue. Add a bottle of coffee liqueur, two small cordial glasses and the recipe for Acapulco Creme. Securely overwrap with cellophane and tie with ribbon or raffia.
