Directions:

* Citrus fruits are readily available year 'round and are easy to use for garnishes. Their bright colors and tangy flavors compliment many foods and beverages. Select bright-colored, firm fruits for the most attractive garnishes. Cover prepared garnishes with a damp towel or plastic wrap and refrigerate until ready to use. Use as a garnish for Basket

You will need a small sharp knife.

Select a round orange or grapefruit. Place stem-side up. Tilt fruit slightly and using the tip of the knife, outline a 1/2 -inch wide handle, being sure the stem scar is not on the handle. Cut two wedges at right angles to the handle and remove (A). Carve out fruit pulp from under handle. Cut a zigzag pattern by making diagonal cuts to the center of the fruit (B). Decorate center with a maraschino cherry, a berry, mint sprig or scoop of cranberry sauce. Or, carefully remove all the pulp and fill basket with fruits of your choice, seafood salad or an appetizer dip.

Wheels, Twists and Knots

You will need a small sharp knife.

Select oranges, lemons or limes. Cut crosswise slices 1/8 to 1/4 inch thick cut some in half if desired. To make wheels, cut small notches in peel with knife (A). To make twists, cut slit from rind almost to center and twist (B). To make knots, cut peel from pulp and tie peel in a knot (C).
