Apple Topping

Ingredients

4 to 6 apples tart, quartered and cored (about 2 cups)
3/4 cup water
1/4 cup brown sugar
1 teaspoon lemon peel grated (optional)
1 teaspoon lemon juice fresh
1/4 teaspoon cinnamon ground
1/4 teaspoon allspice ground

Directions:

Put apples and water in small saucepan, cover and bring to boil cook over low heat until apples are tender. Put apple mixture through a ricer or force through a sieve, discarding the skins. Add remaining ingredients, return to heat, bring to a boil, and simmer until desired thickness. Use as a topping for pancakes, crepes, or waffles.
