Apple Sponge Pudding

Serves: 6

   1/4 cup flour
   1/2 teaspoon baking powder
   1/8 teaspoon salt
   2 eggs large
   1/2 cup sugar
   1/2 teaspoon vanilla extract
   2 cups apples peeled and coarsely chopped Golden Delicious
   1/4 cup currants dried


Preheat oven to 325°. Lightly coat a 9-inch pie plate with non-stick cooking spray. In a small bowl, sift together flour, baking powder and salt; set aside.

In a small mixer bowl at high speed, beat eggs, sugar and vanilla for 3 to 5 minutes or until fluffy and pale yellow. At low speed, beat in flour mixture until well blended.

Stir in apples and currants. Pour into pie plate. Bake for 30 minutes or until puffed in the center and golden brown on top. Spoon into dessert dishes. Serve warm.
