Tamale Pie

1 medium onion, chopped
1 clove garlic, minced
2 tablespoons vegetable oil
1 pound ground beef
1/2 pound pork sausage
1 (28-ounce) can diced tomato
1 (16-ounce) can whole kernel corn, drained
1 tablespoon chili powder
1/2 teaspoon cumin
1/2 teaspoon oregano
1 (16-ounce) can whole olives, drained
1 (7 3/4-ounce) can tomato sauce
2 (15-ounce) cans Nalley tamales, husks removed, cut into 1" to 2" chunks
4 ounces grated Cheddar cheese


Sauté onion, and garlic in oil, using a 10” Dutch oven, until golden but not brown. Add ground beef and sausage until meat is browned. Drain excess fat. Stir in tomatoes, corn, chili powder, cumin, and oregano. Cover and simmer 10 minutes.

Add olives, tomato sauce, and tamales. Sprinkle top with cheese. Cover and bake about 45 minutes, until mixture is bubbly.
