Dutch Chicken Cordon Bleu

Ingredients

6 boneless skinless chicken breast halves
6 ounces thinly sliced proccuto or ham
6 ounces Swiss cheese, thinly sliced (the good stuff, with the holes in it)
1/2 cup flour
salt and pepper for each chicken breast
1/2 cup white wine
1/2 cup heavy cream

Directions:

Place each breast into a plastic bag and pound with a tenderizing hammer, until flattened and meat fibers are well broken. Sprinkle salt and pepper over each breast and place 1 oz. of ham and cheese on top. Roll the breast jelly roll style, folding in the ends ro keep the cheese from melting out of the chicken when cooked. Hold the end flap with a tooth pick or two.

In another plastic bag, pour the flour then shake each rolled up breast in the flour and bag. Place the floured chicken into a preheated, well oiled, 10” Dutch oven and brown on all sides. Cover and bake at 350°F for 20 minutes.

Remove chicken from Dutch oven and set aside. Deglaze the oven with white wine, and reduce amount by about half. Add cream and simmer to thicken. Remove tooth picks from the chicken and pour sauce over chicken.
