Sweet and Sour Zucchini

4 medium zucchini, sliced 1/4" thick
1/2 medium yellow onion, diced
1 tablespoon dried basil
1 large tomato, diced
2 tablespoons butter
seasoned salt to taste
pepper to taste
4 tablespoons white wine vinegar or rice vinegar (try balsamic)
4 tablespoons sugar


Melt butter in a hot Dutch oven; add all ingredients, but vinegar and sugar, and sauté 5 minutes. Stir in vinegar and sugar. Sauté 2 to 3 minutes longer. Serve hot.
