Sausage, Mushroom, and Cheese Grits

1 pound breakfast sausage
4 ounces mushrooms, sliced
1/4 cup onion, minced
6 ounces Cheddar cheese
1 teaspoon salt
pepper to taste
5 cups water
1 cup quick cooking grits


In a 10” Dutch oven, brown the sausage, then drain off the fat. Add mushrooms and onions, sauté until onions are opaque and mushrooms are soft, about 3 to 5 minutes. Add water salt and pepper. Bring to a boil. Add grits and stir for 1 minute or until thickened. Add cheese and stir well. Serve hot
