Pepperoni Salad

Serves: 6

1 medium onion, thinly sliced
8 ounces pepperoni slices
1/4 cup crumbled blue cheese
2/3 cup salad oil
1/3 cup cider vinegar
salt to taste
freshly ground black pepper to taste
10 ounces fresh spinach, washed, dried, and chopped
1/2 head iceberg lettuce, torn


Several hours before serving, separate the onion rings and place in a large bowl; add the remaining ingredients, except the lettuce, toss well, cover and chill until serving time. 15 minutes before serving time, toss in lettuce. (The salad is best if prepared the day before serving.)
