Chicken or Veal Parmigiana

1/3 cup dry bread crumbs
2 tablespoons grated Parmesan cheese
3/4 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1 pound boneless skinless chicken breast half or thin veal steaks
1 egg, beaten
1 (8-ounce) can tomato sauce
3/4 cup mozzarella cheese, shredded


Combine first four ingredients in a plastic ziplock bag. Dip each chicken breast or piece of veal in beaten egg, then place in bag and gently toss to coat.

Place meat in a 10” or 12” preheated, oiled Dutch oven. Bake at 375°F for 10 minutes. Turn meat over and bake an additional 10 minutes, until thoroughly cooked. Spoon tomato sauce over meat, top with cheese and bake 3 to 5 minutes until the cheese is melted.
