Baked Cheesy Zucchini

1 medium zucchini thinly sliced
1 sweet onion thinly sliced
2 Roma tomatoes thinly sliced
2 tablespoons butter or margarine melted
3/4 cup Italian flavored bread crumbs
1 cup grated mozzarella cheese


Preheat oven to 350 degrees.

In a greased 9 x 9-inch pan, layer zucchini, onion, and tomatoes. Drizzle butter over vegetables. Sprinkle breadcrumbs over top. Cover and bake 45–50 minutes, or until vegetables are tender. Remove from oven, uncover, and sprinkle cheese over top. Bake 5–7 minutes more, or until cheese is bubbly. Makes 4 servings.
