Jack-o-Lantern Cake

Ingredients

2 packages Betty Crocker SuperMoist devil's food cake mix (yellow or white cake mix)
water, oil and eggs called for on cake mix packages
2 tubs Betty Crocker Rich & Creamy vanilla ready-to-spread frosting or
2 recipies Vanilla Buttercream Frosting (see Fabulous Frostings and Glazes chapter)
9 drops yellow food coloring
6 drops red food coloring
1 green, flat-bottomed ice cream cone
10-12 large black gumdrops
2 small green gumdrops
2 green chewy fruit snacks rolls (from 5-ounce package)

Directions:

1- Heat oven to 325°. Grease bottom and side of 2-quart round casserole with shortening lightly flour. Make 1 cake mix as directed on package, using water, oil and eggs. Pour batter into casserole.

2- Bake devil's food or yellow cake 1 hour 20 minutes to 1 hour 25 minutes, white cake about 1 hour 15 minutes. Cool 15 minutes. Remove cake from casserole place rounded side up on wire rack. Cool completely, about 1 hour. Repeat with remaining cake mix.

3- Tint frosting with yellow and red food colors to make orange frosting. Place 1 cake, rounded side down, on large round serving plate. Spread 2/3 cup frosting on flat side, almost to edge. Place remaining cake, rounded side up, on frosted cake to make pumpkin. Frost with remaining frosting.

4- Make vertical lines over cake with knife to shape pumpkin. Trim cone to desired height for stem place upside down on cake. Roll black gumdrops between sheets of waxed paper to 1/4-inch thickness. Cut out eyes, eyebrows, nose and mouth, and arrange on pumpkin for face. Cut green gumdrops in half, and place on eyes. Cut out vines and leaves from fruit snack rolls. Arrange on pumpkin. Store loosely covered at room temperature.

High Altitude (3500 to 6500 feet): For devil's food: Heat oven to 375°. Make each cake mix with 1 3/4 cups water, 1/4 cup all-purpose flour, 1 tablespoon oil and 3 eggs beat on low speed 30 seconds, then on medium speed 4 minutes. Bake 1 hour 5 minutes to 1 hour 15 minutes. For yellow: Heat oven to 350°. Make each cake mix with 1 1/2 cups water, 2 tablespoon all-purpose flour, 2 tablespoons oil and 3 eggs beat on low speed 30 seconds, then on medium speed 4 minutes. Bake 1 hour 10 minutes to 1 hour 15 minutes. For white: No changes.

Betty's Tip: Make a face with chewy fruit snack rolls instead of the gumdrops. Choose any color or flavor you like.
