Pesto Sauce

2 cups fresh basil leaves firmly packed, blanched and chopped
1/2 cup fresh spinach firmly packed
1/2 cup Vegetable Broth
3 cloves garlic
3 tablespoons pine nuts toasted


Put all the ingredients in a blender and process on high speed until smooth. Stored in a sealed container in the refrigerator, Pesto Sauce will keep for 3 days.

• For the best results, use the freshest and greenest basil available.
• The yield for this recipe may seem small, but a little bit goes a long way.
