Apple Pecan Cobbler

Ingredients

FILLING
12 large Gala Apples or Fuji apples, peeled and cut into large slices (about 6 slices per apple)
1/2 teaspoon ground nutmeg
1 orange (you need the juice and the zest)
3/4 cup Dried Peach Sauce
TOPPING
2 cups oat flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups unsweetened soy milk
1 cup unsweetened applesauce
3/4 cup Coconut Vanilla Granola
1/2 cup pecans

Directions:

Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.

To make the filling, arrange the apples in a single layer on the lined baking sheet and sprinkle with the nutmeg. Bake for 15 minutes, just until starting to soften. Heat a large dry skillet over medium-high heat for 2 minutes. Put the apples in the skillet (if the apples don’t sizzle immediately, the skillet isn’t hot enough). Cook, stirring constantly, for 1 minute. Stir in the zest and the peach sauce and continue stirring until the apples caramelize, about 1 minute. Stir in the orange juice and cook for 10 seconds longer. Transfer the filling to a 13 x 9-inch baking pan.

To make the topping, put the flour, baking powder, cinnamon, and nutmeg in a medium bowl and stir with a dry whisk to combine. Put the soymilk and applesauce in a small bowl and stir until combined. Pour into the flour mixture and whisk for 1 minute. Stir in the granola until well incorporated.

To assemble the cobbler, spoon the topping in a single layer over the filling. Bake for 15 minutes. Remove from the oven and randomly insert the pecans into the cobbler. Return to the oven and bake for about 10 minutes longer, until golden brown. Cool slightly before serving. Serve warm or chilled. Covered and stored in the refrigerator, Apple-Pecan Cobbler will keep for 4 days.

Note: You may need to cook the apples in batches depending on the size of your skillet. Either use more than one skillet or clean the skillet and repeat the process until all the apples are ready for the filling.
