1. Heat oven to 400°. Grease pie plate, 9 x 1 1/4 inches. Sprinkle onion and Parmesan cheese in pie plate.
2. Stir Bisquick, milk and eggs until blended. Pour into pie plate.
3. Bake 20 minutes. Spread with pizza sauce top with remaining ingredients. Bake 10 to 15 minutes or until cheese is light brown. Let stand 5 minutes before serving. Sprinkle with additional Parmesan cheese if desired.
HIGH ALTITUDE (3500 to 6500 feet): Increase first bake time to 33 minutes.

BETTY'S TIP: Doubling any Impossibly Easy Pie recipe is a breeze. Just double the ingredients, and bake in either two pie plates, 9 x 1 1/4 inches each, or in a 13 x 9 x 2-inch baking dish. If you use the baking dish, bake the pie for 10 minutes longer than the recipe indicates.
