Cheesy Vegetable Strata


Serves: 8

Ingredients

Directions:

1. Cut each bread slice diagonally into 4 triangles. Arrange half of the bread triangles in ungreased rectangular pan, 13 X 9 X 2 inches. Top with vegetables. Sprinkle with cheese. Top with remaining bread.

2. Beat remaining ingredients with hand beater or wire whisk until blended pour evenly over bread. Cover and refrigerate at least 2 hours but no longer than 24 hours.

3. Heat oven to 325°. Cover and bake 30 minutes. Uncover and bake about 45 minutes longer or until knife inserted in center comes out clean. Let stand 10 minutes before cutting.

Lighter Cheesy Vegetable Strata: For 3 grams of fat and 185 calories per serving, substitute 2 cups fat-free cholesterol-free egg product for the eggs. Use reduced-fat Cheddar cheese and fat-free (skim) milk.

Cheesy Vegetable-Ham Strata: Sprinkle 1 cup chopped fully cooked turkey ham over the vegetables in step 1. Decrease salt to 1/2 teaspoon.
