_ to 2 1/2 pounds broiler fryer chicken, skin removed
___ teaspoon salt
___ teaspoon black peppercorns, crushed
___ cup apple cider
___ cup roasted applesauce
Chopped fresh parsley, if desired
Heat oven to 375°. Place chicken in ungreased rectangular pan, 13 x 9 x 2 inches. Sprinkle with salt and pepper. Pour cider and marinade over chicken.
Cover and bake 30 minutes; turn chicken. Bake uncovered 20 to 30 minutes longer or until juice of chicken is no longer pink when centers of thickest pieces are cut. Sprinkle with parsley.

Roasted-apple marinade is a bottled fat-free dressing and marinade made from fresh apples that have been roasted and mixed with champagne vinegar, sugar and spices.
