Wash and soak beans at least 2 hours, preferably overnight.
In a large soup kettle, combine beans, water, stock, salt, ham hock, bay leaves, and thyme. Cover and simmer for 2 1/2–3 hours. Add tomatoes, onions, and celery. Cover and simmer 1 1/2 hours. Add garlic, sausage, and chicken. Cover and simmer 40 minutes. Serve.
