Platte River Catfish Fillets

Ingredients

2 tablespoons lemon juice
2 tablespoons white wine
1/2 cup dry bread crumbs
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon pepper
1 pound catfish fillets
2 teaspoons oil

Directions:

Heat oven to 450°. Spray 15x10x1-inch baking pan with non-stick cooking spray. In shallow dish, combine lemon juice and wine. In another shallow dish, combine bread crumbs, salt, garlic powder, and pepper. Dip fillets in liquid, then dip in crumbs to coat. Arrange coated fillets on sprayed pan; drizzle with oil. Bake at 450° for 8–10 minutes or until fish flakes easily with fork.
