1 (16-ounce) can black-eyed peas, drained and rinsed
1 (15-ounce) can shoepeg corn, drained
1/2 yellow pepper, chopped
1/2 orange pepper, chopped
1/2 cup sweet onion, chopped
1/4 cup oil
1/4 cup white vinegar
salt and pepper to taste
Optional: 1/4 cup sugar
tortilla chips


Combine vegetables in a serving bowl. Add remaining ingredients except chips; mix well. Cover and chill for at least one hour. Serve with tortilla chips.

Tip: Try hollowed-out bread rounds, cabbage or even pineapple halves for serving tasty dips.
