Baja Shrimp Quesadillas

Ingredients

2 1/2 pounds shrimp, peeled and cleaned
3 cups shredded Cheddar cheese
1/2 cup mayonnaise
3/4 cup salsa
1/4 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper
12 (6-inch) flour tortillas

Directions:

Chop shrimp, discarding tails. Mix shrimp, cheese, mayonnaise, salsa, cumin and peppers; spread one to 2 tablespoons on one tortilla. Place another tortilla on top; put on a greased baking sheet. Repeat with remaining tortillas. Bake at 350 degrees for 15 minutes; remove and cut into triangles.

Tip: Use muffin tins to make giant ice cubes for a punch bowl…they'll last much longer!
