Chicken And Turkey Sausage with Sund Dried Tomatoes, Purple Cabbage, Red Apples

4 cups purple cabbage shredded
2 cups red apples with skin, sliced
1 cup onion sliced
1/3 cup cranberry juice
1 teaspoon fennel or caraway seeds
1/2 teaspoon freshly ground black pepper
4 chicken and turkey sausages with sun dried tomatoes


1. Layer cabbage, apples, and onions in a large skillet or wok.
2. Add cranberry juice, fennel or caraway seeds, and black pepper.
3. Add sausages and cover and steam until vegetables are soft.
4. Serve with steamed brown rice.

Note : These sausages, which generally come four to a package, are precooked. You can double this recipe to enjoy the leftover sausages, cabbage, and apples in pita bread for lunch the next day.
