Preheat oven to 425°. Wash potatoes, and pat dry. Brush with small amount of melted butter (or oil). Bake 50–60 minutes, or till done. Remove from oven, and lower heat to 300°.
Cool potatoes slightly, then cut in half and scoop out centers. (Can reserve pulp for another dish.) Brush potato skins with melted butter. Bake in 300° oven 25 minutes. Sprinkle with bacon and cheese during last 5 minutes. Serve with sour cream.
