Southern Red Rice

2 cups rice
1/4 cup bacon drippings
1 (14 1/2-ounce) can diced tomato
1 teaspoon salt
1 quart chicken broth


Sauté rice in bacon drippings over medium-high heat for 1 minute, stirring constantly. Add tomatoes, salt, and chicken broth, and bring to a boil. Lower heat to medium-low, and simmer covered about 20 minutes, until rice is tender.
