Blend first 3 ingredients. Spread on bread rounds; top with cucumber slices. May top with additional dressing and/or another bread round. If serving open face, you may want to spice them up with a sprinkle of paprika and/or red pepper. Chill.
Editor’s Extra: Cucumbers are prettier unpeeled if served open-face, but you may like them peeled. How thick you slice them affects taste, too. My preference is to slice them paper thin and use several slices on each bread round—the choice is yours.
