Preheat oven to 450°. Heat oil in oven-proof skillet. Sear seasoned steaks well only on one side, about 2 minutes. Carefully transfer skillet to hot oven—do not turn steaks. Cook about 12 minutes, more or less, to your desired doneness. Put on plate crusty side up, and add a pat of butter to top of each steak. Offer steak sauce, but it’s great without it!
