Sprinkle chops with salt. Spray a 10-inch skillet with nonstick cooking spray. Over medium-high heat, cook chops 2 minutes on each side. Reduce heat to medium, and cook 5 minutes more on each side. Combine peach preserves, mustard, and water; stir well. Pour sauce over chops, and cook till heated through, 2–3 minutes. Serve sauce over chops. Sprinkle with pepper, if desired.
