In a shallow bowl, mix eggs with buttermilk. In another bowl, mix flour and salt; add pepper to taste. Dip tomato slices in egg-milk mixture, then coat with seasoned flour. Without crowding, fry in 1 inch of hot oil 3–4 minutes, or till golden brown and crisp on both sides. Sprinkle lightly with salt as soon as you remove from oil, then drain on paper towels. Serve hot.
