Deluxe Ham Omelet

Serves 1-2


3 eggs
2 tablespoons half and half
2 tablespoons minced chives
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 tablespoon olive oil or vegetable oil
1/2 cup chopped, cooked ham
2 tablespoons chopped green peppers
2 tablespoons chopped tomatoes
2 fresh mushrooms, sliced
2 tablespoons shredded Cheddar cheese
2 tablespoons shredded mozzarella cheese

In a small bowl, beat eggs, cream, chives, garlic, salt, and pepper.

In a large skillet, warm oil over medium heat. Pour egg mixture into skillet. As the eggs set, lift edges, letting uncooked portions flow underneath. Sprinkle with ham, pepper, tomato, and mushrooms. When eggs are completely set remove from the heat and fold in half. Sprinkle with cheeses; cover fir 1 to 2 minutes or until melted. Yield 1-2 servings.
