Curried Rice with Pineapple
Serves 4
Ingredients:
1 onion, chopped1 1/2 cups water
1 1/4 cups low-sodium beef broth
1 cup uncooked rice
1 teaspoon curry powder
1/4 teaspoon garlic powder
8 ounces pineapple chunks, drained
1. In a medium saucepan, combine onion, water, and beef broth. Bring to a boil, and add rice, curry powder, and garlic powder. Cover and reduce heat. Simmer for 25 minutes.
2. Add pineapple and continue to simmer 5 to 7 minutes more until rice is tender and water is absorbed. Transfer to a serving bowl and serve.
