Lemon Rice Pilaf

Serves 6

Ingredients:

1 tablespoon butter
1/2 cup chopped onion
1 cup long grain rice
2 cups water
1/4 cup lemon juice
2 teaspoons chicken bouillon
1 teaspoon lemon pepper seasoning
1/4 teaspoon garlic powder
1 teaspoon salt

Melt butter in skillet. Add onion and sauté until soft. Add rice and sauté for 2 minutes. Mix together water, lemon juice, bouillon, lemon pepper, garlic powder and salt in large microwave-safe bowl. Stir in rice mixture. Cover and place in microwave. Cook for 20 minutes. Let sit for 5 minutes then fluff with a fork.
