Strawberry Brownies

The secret to these scrumptious strawberry brownies? A boxed cake mix makes these pink brownies light and fluffy and very easy to make.

Ingredients:
1 package (13-1/4 ounces) strawberry cake mix
1/3 cup canola oil
2 large eggs, room temperature
1/2 teaspoon vanilla extract
1/2 cup white chocolate chips
GLAZE:
1 cup confectioners' sugar
1 to 2 tablespoons whole milk
1 teaspoon crushed freeze-dried strawberries, optional

Directions:
Preheat the oven to 350°F. Line an 8-inch square baking pan with parchment and grease the parchment.

In a large bowl, beat the cake mix, oil, eggs and vanilla extract until smooth. Gently fold in the white chocolate chips. Transfer the batter to the prepared baking pan, and bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and set on a wire rack to cool completely.

In a large bowl, beat the confectioners' sugar and milk until smooth. Spread the glaze over the cooled brownies. Let stand until the top of the glaze sets. If desired, garnish the brownies with crushed freeze-dried strawberries.
