Grilled Okra and Jalapeños
Grilled okra is crisp and tender.
Dovetailing tip: Pull out the 4 1/2 Jalapeno Peppers you prepared during Meal 2. You have an extra 1/2 pepper to grill, so none went to waste during preparation.
|3 pounds||okra, trimmed|
|4||large jalapeño peppers, sliced crosswise 1/2 in. thick and seeded|
|2 tablespoons||vegetable oil|
Heat grill to medium-high.
Thread okra and jalapeño crosswise onto 10 sets of parallel 12 inch skewers (using two skewers prevents the okra from spinning when turned). Brush with oil. Season with salt and pepper.
Grill until bright green and tender, 2 to 3 minutes per side. Serve immediately.
