Molten Chocolate Cake for Two


My husband and I discovered this recipe three years ago and made it for the first time together on Valentine's Day. We fell in love with it so much that we have made it every Valentine's Day since. Aside from its chocolaty-gooey-goodness, it is incredibly fast and easy to make. I also love the fact that it is perfectly portioned for two people, making it a truly perfect Valentine's dessert.

Ingredients:
4 tablespoons unsalted butter
1/3 cup semisweet chocolate chips
1/2 teaspoon vanilla extract
1 large egg
1 large egg yolk
2 tablespoons sugar
1/4 teaspoon salt
1 tablespoon flour
confectioner's sugar (optional)


Directions:
Preheat oven to 450 degrees F. Grease and flour two 6 oz ramekins. Melt the butter and chocolate chips in a small saucepan on the stovetop on low heat. Stir constantly and take off heat as soon as it is melted all the way through. Stir in the vanilla and set aside. Combine egg and egg yolk with sugar and salt in a mixing bowl. Mix on medium speed until mixture becomes thick and lighter in color. Add the chocolate and butter mixture to eggs along with the flour and mix until fully incorporated and smooth. Divide batter in half and add to greased and floured ramekins. Place in oven and bake for 8-10 minutes or until the edges are set and center is slightly wobbly. Let it sit for 15 seconds before running a knife around the edges and turning it onto a plate. Lightly dust the top with confectioner's sugar if you desire.
