Spanish Rice


Serves: 4

Ingredients

1/2 cup chopped onion
2 tablespoons chopped fresh cilantro
2 tablespoons vegetable oil or margarine or butter
1 cup long grain white rice
1 3/4 cups water
1 cup chunky salsa
2 tablespoons chili powder
1 teaspoon minced garlic
1 teaspoon salt
1/2 teaspoon ground cumin

Directions:

1. Chop the onion.
2. Chop the cilantro
3. Heat the oil in a deep frying pan over medium-high heat. Add the rice and stir to coat with the oil. Fry for 2 minutes while stirring frequently.
4. Add the water and the remaining ingredients, stir well, and bring to a boil. Then reduce the heat to medium-low.
5. Cover and simmer 20 to 25 minutes, stirring every 10 minutes, until the water is absorbed and the rice is tender. Serve the rice as is or topped with shredded cheddar cheese.

Important tip
This rice dish requires frequent stirring in the beginning to keep it from sticking to the pan. Once it is covered and simmering, stir it every 10 minutes.
