Turkey Burgers with Caramelized Onions

Ingredients

CARAMELIZED ONIONS
1 large onion sliced thin, in rounds or pieces, as you prefer
2 tablespoons olive oil
1 teaspoon water or white wine
1/4 teaspoon salt
freshly ground pepper
BURGERS
1 1/3 pounds ground turkey
2 tablespoons chopped parsley
2 tablespoons minced shallots or onions
1 teaspoon Pickapepper or other hot sauce (optional)
salt and pepper to taste

Directions:

Cook onion in olive oil in sauté pan over lowest possible heat for 50–55 minutes, stirring every once in awhile until onions have sweated out and are soft. You will be tempted to turn up the heat, but don’t. Once they are soft, turn the heat to medium and cook, stirring constantly, until onions have browned/caramelized, about 15–20 minutes. Add water or white wine and scrape off whatever residue has stuck to the sides of the pan, reconstituting it into the onions. Remove from heat and season with salt and fresh pepper. Combine all ingredients for burger in a large bowl, mixing thoroughly, and divide into four parts. Pat into four balls. Flatten into burgers and cook by whatever method you prefer: grilled, pan-fried, or broiled. When cooked (no longer pink in the middle), top with caramelized onions, and serve with ketchup, mustard, and whatever other condiments you like. You may also wish to heat up some rolls and use them as buns. Eat with Oven-Baked Sweet Potato Fries or Potato Chips and a Common Ground Salad.
