Dad’s Mixed-Up Taco Salad

Ingredients

1 pound lean ground beef
1 (1 1/4-ounce) package taco seasoning mix
1 (16-ounce) package salad mix
2 tomatoes, chopped
1 (4 1/4-ounce) can sliced black olives, drained
2 green onions, sliced
1 (13-ounce) package nacho cheese-flavored tortilla chips
1 (16-ounce) package shredded Cheddar or Monterey Jack cheese
Garnishes: sour cream, guacamole or cubed avocado, sliced jalapeño peppers, black beans, corn, salsa, ranch salad dressing

Directions:

In a skillet over medium heat, brown beef until no longer pink. Add taco seasoning according to package directions; set aside. In a very large bowl, combine salad mix, tomatoes, olives and onions. Crush tortilla chips before opening bag. Add chips and cheese to mixture in bowl; toss with your hands. Add beef mixture; toss again until all ingredients are evenly distributed. Serve with desired toppings.
