Spicy Zucchini Muffins

Ingredients

1/4 cup canola oil
3/4 cup liquid sweetener
1 tablespoon blackstrap molasses
2 cups grated zucchini
DRY INGREDIENTS
2 cups white flour
1 cup whole wheat flour
1 teaspoon powdered ginger
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup raisins

Directions:

Preheat the oven to 350°F.

In a mixing bowl, stir together the oil, liquid sweetener, molasses, and zucchini.

Sift the dry ingredients into the liquid ingredients, and stir until blended.

Mix in the raisins and spoon into lightly oiled muffin tins until they are full. Bake for 20 minutes.

Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
