Amaranth-Lemon-Apple Muffins

Ingredients

1 apple grated
1/2 cup raisins
1/2 cup brown sugar
1/2 cup fresh lemon juice
3 tablespoons canola oil
DRY INGREDIENTS
1 3/4 cups unbleached white flour
1/2 cup amaranth flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cloves

Directions:

Preheat the oven to 350°F.

In a medium mixing bowl, stir the apple, raisins, sugar, lemon juice, and oil until thoroughly combined. Sift the dry ingredients into the liquid ingredients, and stir everything together until all the dry ingredients are absorbed. Spoon into lightly oiled muffin tins, and bake for 18 minutes.

Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
