Cake Muffins

Yield: 10 plain or 12 fruit and nut muffins

Ingredients

DRY INGREDIENTS
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
LIQUID INGREDIENTS
3/4 cup water
1/2 cup liquid sweetener
3 tablespoons canola oil
1 teaspoon vanilla extract
VARIATIONS
1/2 cup dried fruit
1/2 cup nuts or seeds
1/2 cup corn and onions
1 tablespoon poppy seed or sesame seeds
1 tablespoon fresh herbs (or dried)
1 tablespoon grated fresh ginger or 1/2 tsp powdered
1 teaspoon lemon or orange zest

Directions:

Preheat the oven to 350°F.

Mix the dry ingredients in a medium mixing bowl.

Add the liquid ingredients to the dry ingredients, and mix thoroughly. If you are going to add fruit, nuts, or herbs for any of the variations listed below, do it now. Pour the batter into lightly oiled muffin tins, and bake for 15-20 minutes.

Add 1 or 2 of the variations (You may want to omit the vanilla.)

Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
