Lemon Blueberry Muffins

Ingredients

LIQUID INGREDIENTS
2/3 cup lemon juice
1 ripe banana mashed
1/4 cup soy yogurt
3 tablespoons canola oil
DRY INGREDIENTS
2 cups unbleached white flour
3/4 cup oat bran
2/3 cup granulated sweetener
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup fresh blueberries or frozen blueberries, thawed

Directions:

Preheat the oven to 350°F.

Mix the liquid ingredients in a medium mixing bowl.

Sift the dry ingredients into the liquid ingredients. Stir well until all the dry ingredients are absorbed.

Add the blueberries and mix gently so as to not crush the berries. Fill lightly oiled muffin tins full, and bake for 18 minutes.

Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
