Granola Muffins

Ingredients

1 overripe banana mashed (1/3 cup)
1 cup granola cereal
1 cup soy yogurt
1/3 cup orange juice
2 tablespoons liquid sweetener
DRY INGREDIENTS
1 1/4 cups unbleacked white flour
3/4 cup brown rice flour
2 teaspoons baking powder
1/4 teaspoon salt

Directions:

Preheat the oven to 350°F.

Mash the banana in a mixing bowl, and then add the granola, soy yogurt, orange juice, and liquid sweetener.

Sift the dry ingredients into the liquid ingredients, and mix well. Spoon into lightly oiled muffin tins, and bake for 15 minutes. Don’t overbake.

Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
