Quiche Lorraine

Ingredients

1 refrigerated pie shell (from 15-ounce package) or Pastry for One-Crust Filled Pie in Desserts, Cakes & Pies
8 slices bacon
8 ounces Swiss cheese, cut into thin strips (2 cups)
2 tablespoons all-purpose flour
4 eggs
1 1/2 cups half and half
1/4 cup chopped onion
dash pepper

Directions:

1. Heat oven to 350'F. Prepare pie crust for one-crust filled pie using 9-inch pie pan.

2. Cook bacon in large skillet over medium heat until crisp. Remove from skillet drain on paper towels. Crumble.

3. In medium bowl, combine cheese and flour mix well. In large bowl, beat eggs slightly. Add half-and-half, onion, pepper, bacon and cheese mixture mix well. Spoon into crust-lined pan.

4. Bake at 350'F. for 40 to 45 minutes or until knife inserted near center comes out clean. Let stand 10 minutes before serving.
