Cherry Cobbler

Ingredients

4 cups fresh pitted cherries or unsweetened frozen cherries
3/4 cup sugar
1 tablespoon quick-cooking tapioca
1 cup flour
2 tablespoons sugar
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup butter or margarine
1 egg, slightly beaten
1/4 cup milk
cream or ice cream

Directions:

Combine cherries, sugar, and tapioca let stand a few minutes. Cook until thick and bubbly pour into baking dish. Mix together flour, sugar, baking powder and salt cut butter in until coarse and crumbly. Combine egg and milk. Add egg mixture all at once to dry mixture stir just to moisten. Spoon batter on top of filling in baking dish. Bake at 400°F for about 20 minutes. Serve with cream or ice cream.
